Bad Idea Department

Red Beet Mojito

Makes 1 drink
Chef Katsuya Fukushima of Cafe Atlantico and Minibar in downtown Washington says it made sense to use beets as a sweetening agent in this drink recipe, since some sugar is processed from beets. The recipe is adapted from the restaurant.
5 lime wedges
15 small mint leaves
1 to 1 1/2 tablespoons sugar
Ice cubes
1/4 cup white rum
1 to 1 1/2 tablespoons beet puree*
1 or 2 splashes of lemon-lime soda, such as Sprite
Sugar cane stick*, for garnish (optional)
In a highball glass or tall tumbler, mix the limes, mint and sugar until the ingredients are well crushed and combined. Fill the glass with ice and add the rum and red beet puree. Cover and shake well, or stir vigorously. Fill the rest of the glass with the lemon-lime soda. Garnish with a fresh sugar cane stick, if desired, and serve immediately. I don't think so... this sounds like something
that would appear on Iron Chef, not America!
Today's Food Update:



Out straight today cooking- blueberry pie in the oven (god, how I hate making pie crust!) spicy ribs half cooked on the counter, and cheesy grits casserole ready to heat up. I got some heirloom tomatos to start, and of course, my beloved RedStripe. All of this is because tomorrow is Nate's 28th birthday and when I asked him where he wanted us to take him for the celebration dinner he said he wanted ME TO COOK. So here I am.
I told Mandy and she said he just doesn't want to be seen with us anywhere.
Quilting Update:
Went out with Sylvia yesterday for a pate lunch (right after I signed up for Curves) and had a great conversation- she had new earrings that are on ear-threads that we have to find so we can make our own. She just taught at QBL and came home energized and exhausted if that's possible at the same time. I worked o9n the border to DUI for a bit but really didn't accomplish much there.
Knitting Update:
YIPPEEE. Finished the first sleeve last night! I am still not satisfied it's the right length so I won't add the I-cord until I have both done, but I am seeing the light at the end of the tunnel and will never again make a whole sweater on size #3 needles. Though I do have to say I am pretty proud of it. So far.
