The Fat Person of Prosciutto!
Years ago I used to make this huge savory pie full of greens layered with garlic and ricotta. It was usually done on my largest sheet pan and free form so it was perfect for large parties, like my old Marathon Party (stories about that another time). I loved the pie, but it was hard talking other people into trying it so I would always have lots leftover. Well, the other day my friend Victoria started talking about 'Erbazzone' in reference to her interviews for the Seasonal Produce and Farmers Marketswebsite. And there all of a sudden was my lost recipe at the end of a simple Google click. Actually there were several recipes, most in Italian, so I hit the translate button and this is what I got:
Erbazzone
The ingredients for I step on : 1,5 kg of spinaci or swiss chards, three or
four cipollotti with fresh and green stem, a P~ of prezzemolo, 50 grams of
lardo of prosciutto or bacon, 4 spoons of oil, 50 grams of butter, two
segments of garlic, four or five manciate of reggiano $parmesan, knows them
and pepper sufficient to.
The ingredients for the paste: 200 grams of flour, a walnut of strutto, two
oil spoons, sufficient to know them and pepper, lukewarm water sufficient
to.
To melt on the fire the fat person of prosciutto and adding to the
crushed garlic and the cipollotti trita to you (the stems comprised). To add
to oil and butter, and after that the cipollotti lessati and strizzati will
have withered to join the spinaci () to leave to insaporire with knows them
and pepper.
When it is cooled off to remove the garlic, and to add the prezzemolo
(tritato) and the $parmesan (grattugiato).
In order to prepare the paste leaving with flour, oil, walnut of strutto, it
knows them and lukewarm water, working the paste and pulling two sfoglie.
Imburrate the teglia and rested before leaf through, therefore to add the
green filling and put down the second one leaf through (pulled thinner of
before) making it increspare on I step on, creating like of the small ondine
with the paste.
Bucherrelare leaf through it, puts all in furnace to 200 degrees for
approximately mezzora.
Little before the aim of the baking to add on the surface of the small
pezzettini of lardo, therefore to replace in furnace in order to complete
the baking (only some minuteren)

Knitting Update: Last week I was in my closest good yarn shop and found a bunch of different reds in all sorts of yarn. I had no idea what to do with them but stood there winding balls until the place closed. Last time I was there I spent over $200 on greens and lavenders just because they looked so good together and then came home and knitted on huge needles until a throw appeared which happens to look quite stellar in my living room back home, especially after I embellished it with gold ribbons to hide all my tie-offs. So now I have my new Denise needles and all these reds and thought I needed a shawl so started right in casting on 200 stitches with a marker in the center. All I do is k2tog right before the marker on each side (because I can't remember which is the right side, it's easier to jsut do this on each side!) and I am ending up with a nice right angle triangle. I am knitting one whole skein and then going to another yarn. When I get really bored with this I do a drop stitch all the way across. It's going to be nice, but on the hippy dippy side so wearing it will be limited. At least it's not a poncho. After this Borrocco sent me a newsletter yesterday using their suede as a knitting bag- a perfect use for it so I will pick up the required 5 balls and do one of those, but might use the bottom and handles that I already bought.

After sitting and knitting like a lump all day yesterday my fingers are so sore on the tips that I can barely type. And ain't that a shame. I hate having my fingernails removed- it's a month before I am back to normal. But today I wil find something else to do and maybe my bruised little pads will heal.

Life Update: I am feeling sorry for myself being in FL instead of NE for the holidays, but I am feeling good that I don't have to DO it all still. But I haven't even arranged for things for the kids yet and must get at it today. Gift certificates will be it- I don't know what else to buy because they need time more than anything. And I can't buy Nate a girlfriend- well, I COULD but that wouldn't be very motherly would it?
So it's hard finding festive lightweight clothes and it's killing me to buy things since I have boxes full at home- who woulda thought I would need it here in the land of khakis-and-teeshirts! I hit my favorite consignment store the other day and found this purse- it's a knitted silk cording attached to a tortise shell bottom with tortise rings at the top for the drawstring, vintage and fabulous. There were several pairs of shoes I loved too but the best were quite worn Donald Pliner slides and I passed them by, the others weren't the best fit. And I learned a somewhat good lesson when I bought the feather shoes last season. Sigh. Someday I will have a special lighted shelf for them so I can just look and admire.

Geesh, I need to take pictures, will go and charge up the camera and be back-atcha later. UPDATE- BETTER LATE OR NEVER?
