Good day today hooking up with Old Friend that I had lost touch with for two years! We met at a nice outdoor restaurant and gabbed for 2 hours in the balmy breezes. My distress rose quickly when I found out she is now running marathons and looks great. Oh, I am so jealous! I have to get on the program as soon as I get home so my clothes fit again. Anyway, she is happy in her job and not getting much studio time so we vowed to get at it and take a class...or something... next season when I get back.

SPAM SWISS PIE

1 Deep dish pie shell (9")
6 Eggs
1 c Whipping cream
1/8 tsp Pepper
1 can 12 oz SPAM Luncheon Meat, cubed
1/4 c Chopped onion
2 c Shredded Swiss cheese

Heat oven to 425'F. Bake pie shell 6-8 minutes. Reduce oven
temperature to 350'F. In bowl, beat together eggs, whipping cream,
and pepper. Stir in SPAM and onion. Sprinkle 1 cup cheese in pie
shell. Pour egg mixture over cheese. Sprinkle remaining cheese over
egg. Bake 45-55 minutes or until eggs are set.
