Waiting for the Muskrats

Another good horror-scope today- "You may not realize it yet, but things are really starting to come together for you." For this I waited 61 years.

Well Happy Easter to those of you who celebrate- I do a dance to the Peep myself, and may take a hike up to the koi pond to see the baby ducks. Celebrating 'renewal' is fine but as far as I go in the whole belief system.
These little guys appeared one day thanks to the groundskeeper here. She is their mother-duck and herds them into a ladies room near the proshop every evening so they are safe overnight from the racoons and feral cats who 'fish' for the koi. Now the koi aren't as tasty as they used to be because they are huge- too big for a racoon to capture. So, all is well in the waterfall pool here, a regular nature preserve. Well, except for the ladies room part.

I got my DNA results the other day and I am in the 'H' halogroup as is 40% of the European population. Guess that squashes my cousin's thoughts of being a sliver of NA. Why is that everyone's claim? Anyway, my project today is to make a batch of lava cakes to take to dinner with TY's aunt and uncle AND to contact my cousin with my mtDNA profile-that should ruin HER day--and the duck visit, not to forget the duck visit. Geesh, they are so cute.

And before I go- I am still cleaning out my spam files and GOogle is so funny when I am on that page- they always include a recipe for me . Sounds like perfect holiday fare, eh?

SPAM FAJITAS

Serving Size : 8

Vegetable cooking spray
1 Green bell pepper, cut into
-julienne strips
1/2 Onion, cut into 1/4" slices
1 cn SPAM Luncheon Meat, cut into
-julienne strips (12 oz)
3/4c CHI-CHI's Salsa
8 Flour tortillas, warmed (8")
2 c Shredded lettuce
1/2c hredded hot pepper Monterey
-Jack or Cheddar cheese
1/2c Nonfat plain yogurt
Extra salsa, if desired

Spray large non-stick skillet with vegetable cooking spray. Heat
skillet over medium-high heat. Saute green pepper and onion 2
minutes. Add SPAM. Saute 2 minutes. Stir in salsa and heat
thoroughly. Spoon about 1/2 cup SPAM mixture into each flour
tortilla. Top each with 1/2 cup shredded lettuce, 1 tablespoon
shredded cheese, 1 tablespoon yogurt, and extra salsa, if desired.

Note how they use nonfat yogurt in the interests of 'health'? LMAO

That has to be the most usable SPAM I've seen in a long time. Be sure to report in on the ducks, 'k?

I spent the day eating with my family. In exchange for procuring and preparing (simply) some carrots and green beans and for making two loaves of ciabatta, I got to eat and eat and eat all sorts of things. Now that's a good time! We took group photos, talked non-stop and finally went home before we fell down.

Now I'm trying to figure out putting facings on a small quilt.
