Cornmeal Cake
Preheat oven to 400, butter a 9" cake pan.
fine grind in your food processor:
1 c. skinned blanched almonds OR hazelnuts
1/3 c. cornmeal
1/4 tsp salt
mix together:
1 c. flour, leveled
1/2 tsp baking powder
cream together:
1/2 c. sugar (lt. brown is good too)
1/2 stick butter
add and mix well:
3 egg yolks
1 tsp. vanilla OR almond OR lemon zest
Pour batter into buttered pan, bake about 30 minutes until a test toothpick comes out clean. Meanwhile, clean and macerate a pint of berries, mixed or plain, whatever is in season with a bit of sugar and a splash of liquour or maybe some balsamic vinegar reduction if you have strawberries. Serve the cake warm and add a plop of creme fraiche. The Best summer cake.
