Ribs Ribs Ribs Ribs Ribs Ribs




This certainly isn't a food blog, but sometimes I get so carried away with a plate that I can't help myself. Nothing I like better than good food and I don't necessarily mean FINE food- my favorite meals are often from small informal ethnic restaurants rather than anything with stahs (as we say in Boston).

But last night I think I found the definitive rib recipe: "Thrill of the Grill" by Chris Schlesinger & John Willoughby. You should have known I'd go with the Boston boy, in spite of the fact that we may be better known for beans. These ribs are known as Missouri Ribs, Home Style. I got a 4-pack of racks from Costco the other day which totaled over 8# so had to wait for a few other folks to help me eat them, but now I am so sorry- I sure would love about 6 little ribs right now to tide me over to dinner. But here goes:
A little guacamole to start us out.









For the rub: 2 Tbs EACH of salt,cumin, black pepper, and chili powder
4 Tbs each of sugar and paprika

Mix it all up and rub it into the 4 racks. (I cut them in quarters, about 3-4 ribs each because I didn't have a pan or oven large enough to keep them whole.) Then, put the ribs onto a rack in a sheet pan, cover with heavy duty foil and bake them for 3 hours at a very low temperature- the book says 180, but I think my oven was hotter. Anyway, that's THREE hours. And this is what you get:


They can rest while you make up the sauce: 1 1/2 cups white vinegar
2 Tbs each tabasco and sugar
1 Tbs each salt and ground pepper
I heated this just until the sugar and salt dissolved.

Stick ribs onto preheated grill and brush sauce over a few times. Only leave it on the grill until it starts to char a bit, maybe 5 minutes on each side, then it's ready.

I made a bulgur salad, sort of Florida Tabbouli, and a fabulous potato salad with it and we finished it off. Happily. Then... dessert:


Now these little things were sure good but I think they were a little too 'moulten' and a little light on the 'cake'. Still, I noticed there weren't any left.
